Choose By range. My own ranges lets you type each part yourself, for example pages 1 to 3 and then 4 to 10. Every N pages cuts the PDF into equal parts of the number of pages you choose.

Yes. Choose Pick pages, then Only the ones I pick, and tap the pages you want or type numbers like 1,3-5. Tick the option to put them together in one PDF.

Choose By size and set the largest file you want, such as 5 MB for an email. Pages stay in order and are grouped into files under that size. A single page bigger than the limit is saved on its own, because a page can't be divided.

If the split makes one PDF, you get that PDF. If it makes several, you get a .zip file with each PDF named after the pages it holds.
